Seeking advice on Amman, I'm well versed in Dubai but find myself overnighting in Amman soon due to knee-jerk scheduling.
Given the vast knowledge base on this forum, I'm certain you guys can offer up the perfect advice and warnings.

Satdiver, shouldnt you be at KAF?
Jordan is great! the people are nice..get you a nice massage at the hotel and a beer. then chat up some of the bar workers and see the best places to go. they may even take you to the club with them...they are that nice...good luck

Depending where you are staying , since it is just over night go out and get a good meal and a beer and relax at your hotel . There is a 30 minute cab ride from the airport . My favorite hotels are The Kempinski and the International .

Yeah, Petra is a 3-hour trip each way if you rent a car service, it'll set you back $200 and most of the day walking around, BUT IT'S WELL WORTH IT if you've got the time. I'd even consider extending your layover just to see it.
Otherwise check out the Roman Forum in downtown Amman, follow Zahran Street to the first traffic circle. Pretty neat, and unlike Rome, you can climb all over the ruins. Also, Hashemite Square, right next to that, is real cool with a lot of Haji tourist shops. This is all very cheap with a cab (make sure they turn on the meter first!!), probably 5 JD or less for a one-way trip, or you could probably get a cab driver to wait on you for a whole day for less than $50 USD.
Don't know much about the restaurants, but the Mecca Mall is a nice hangout, only a 2 or 3 JD cab ride from the Sheraton Amman at the fourth traffic circle off Zahran.
Check out Google earth for pics of some of the more interesting stuff.
